Rosalba Morales Bartolo is an internationally recognized "Cocinera Tradicional" of Michoacan, and also celebrated as one of Mexico's best indigenous cooks. Born to a P'urepecha family in San Jeronimo Parenchecuaro, Rosalba grew up fishing with her father, and learning to cook with her mother and grandmother. Aside from creating fabulous traditional dishes with seasonal ingredients, with the gathering of sources in her local area, Rosalba is famed for her incredible Charales, which despite being a tiny fish, she guts and cleans with incredible precision and skill. This extra attention to the preparation of this local fish is just one reason why her cooking is so famous in the Lake Patzcuaro region ,and across the country. When you cook with Rosalba, you will hear many wonderful stories about her international cooking experiences, as a proud ambassador of her P'urepecha culture.
Rosalba is currently working on a menu for you, so we will announce this once she has the arrangements made. You will be arriving in the morning for your class, and feasting by early afternoon.
Along your way back to Patzcuaro, make a brief stop at a local mezcal distillery to sample some lovely mezcal!
